Meatball Pizzettas - "Low Maintenance Monday"

Hands on Tim: 5 min
Total Time: 20 min
Serves: 4

Ingredients:

2 pkgs of (8.8 oz. each) Naan - either white or whole-grain

3/4 cup pizza sauce, divided

1 pkg (12 oz.) pre-cooked Italian meatballs

1 Cup pre-shedded pizza blend cheese

Chopped fresh basil and red onion (optional garnish)


Instructions:

1. Preheat oven to 400
2. Lay naan on 2 baking sheets, 2 per sheet
3. spread 3 TB sauce over each naan
4. Divide meatballs between naan - half meatballs if they are large
5. Scatter cheese over the entire naan
6. Bake until cheese bubbles and meatballs brown slightly (about 15 min); rotating baking sheets half way through
7. Garnish with basil and red onion
8. cut into slices.

Willington Red Potato Pizza

Ingredients

  • 1 recipe for “Homemade Pizza Dough” or whole wheat pizza dough
  • 8 oz. alfredo sauce
  • 3 red potatoes boiled till tender and thinly sliced
  • 1/2 lb. sliced sharp cheddar cheese or mozzarella cheese
  • 2 cups fresh broccoli broken into small crown pieces
  • 1 cup cooked, crispy bacon
  • 1/4 cup of thinly sliced purple onion

Directions

Flour working surface and stretch out dough. (I will try in the future half cooking the dough before loading it - it gets thick) Spread alfredo sauce over crust. Layer red potatoes until covered. Sprinkle lightly to taste with fresh ground pepper and salt. Add cheese. Place broccoli, onion, and bacon on top. Bake at 450° for 20 minutes until crust is light brown.

Let sit until slightly cooled.

BBQ Pork Pizza


Janene and I decided to try out Our Best Bites BBQ Pork Pizza.  It was really good.  I want to include it on our blog so I can find it easily.  I of course made some adaptations - they cook theirs on the grill - which is really cool, but not so practical for me.  I tend to about light myself on fire every time I turn on our hand me down grill.


Ingredients:

Pizza Dough - I would recommend a whole wheat or artisan dough; I usually make my own, but this time I used Pillsbury Artisan canned dough and it was great

Left over BBQ pulled pork - not that I usually have left over, but shredded pork in a BBQ sauce

BBQ sauce - same as the one you used on the pork

Mozerella cheese - 2 to 4 cups depending up on how cheesy you like your pizza

Thinly sliced red onion - LOTS OF IT - this really makes this pizza

1 small can of pineapple chunks

Fresh herbs - could do cilantro, basil etc.

Directions:

Pile it all on and cook according to pizza dough directions

Be prepared to eat a lot of it -it is really good.

Kim's Two Cheese Oregano Bread

Enough dough for one pizza crust (better with white pizza dough than wheat)
1/2 cup grated provolone (2 ounce)
2 T fresh parmesian
1/4 t of oregano (double if fresh)
1/8 t crushed red pepper (optional - or if Kristi double)
1 T yellow cornmeal (to keep from sticking to pan)
1 t olive oil

1. roll out dough
2. leaving a half inch border sprinkle with cheese and spices
3. roll up like a jelly roll, pressing firmly to eliminate air pockets
4. place roll seam side down, pinch seam and ends to seal
5. place roll seam side down on baking sheet sprinkled with cornmeal
6. cut slits in top of dough using sharp knife
7. cover and let rise 40 minutes
8. heat oven to 450
9. brush top of bread with oil
10. bake 20 minutes or until loaf sounds hollow when tapped

* can use whatever cheeses you want
* sometimes sub with italian spices instead of oregano

Pizza Sauce

Ingredients

  • 1 (6 ounce) can tomato paste
  • 6 fluid ounces warm water (110 degrees F/45 degrees C)
  • 3 tablespoons grated Parmesan cheese
  • 1 teaspoon minced garlic
  • 2 tablespoons honey
  • 1 teaspoon anchovy paste (optional)
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon dried red pepper flakes
  • salt to taste

Directions

  1. In a small bowl, combine tomato paste, water, Parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese.
  2. Sauce should sit for 30 minutes to blend flavors; spread over pizza dough and prepare pizza as desired.

Whole Wheat Pizza Dough

I wanted it where I could find it easily
Mostly sugar free - there is one teaspoon to help the yeast grow


Ingredients

  • 1 teaspoon white sugar
  • 1 1/2 cups warm water (110 degrees F/45 degrees C)
  • 1 tablespoon active dry yeast
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 2 cups whole wheat flour
  • 1 1/2 cups all-purpose flour

Directions

  1. In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.
  2. Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
  3. When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
  4. Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.
  5. Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

Inside-Out Pizza Roll


Use Heidi's Pizza Dough recipe or your own

Create inside filling (I like to use left over meat spaghetti sauce -just beefed up a bit)
Or use this recipe (makes 7 cups):
1/4 cup extra-virgin olive oil
1 onion, finely chopped
1 carrot, finely chopped
2 ribs celery, finely chopped
1 clove garlic, finely chopped
2 lbs ground beef
1/2 c dry red wine (optional)
one 28-ounce can tomato puree
1 cup water
salt and pepper

Step one: heat oil (medium low heat)
Step two: cook onion, carrot & celery until soft - stirring occasionally
Step three: add garlic & cook until fragrant (about 1 minute)
Step three: increase heat to medium high, add the beef and cook breaking it up until cooked (about 8 min)
Step four: add in wine and cook until the liquid is cooked off, (about 5 minutes)
Step five: stir in tomato puree and 1 cup water; season with salt and peper
Step six: partially cover and cook over low heat, stirring occasionally for the last 30 minutes, until thickened (about 2 hours)

This is a great recipe - I puree all the vegetables once they are cooked for my picky eaters.
But really you can do anything you want. Some people add 1/4 c. chopped pancetta at the beginning. I never have it on hand.

Step seven: punch down the risen dough and transfer to a lightly floured work surface. Using a rolling pin, roll out to a 12 by 16 inch rectangle.
Step eight: scatter mozzarella cheese on top, leaving a 1 1/2 inch border.
Step nine: spoon on the meat sauce mixture over the cheese.
Step ten: brush the border with beaten egg and roll the dough up loosely, beginning at the short end.
Step eleven: transfer to a parchment-paper-lined baking sheet, brush with more egg and cut 3 vents o top.
Bake until golden brown (30-40 minutes) at 375 degrees.

Heidi's Pizza Dough

Mix together:
4 - 4 1/2 cup bread flour
1 T yeast
1 1/2 t salt

Slowly while mixing add:
2 T olive oil
1 1/3 c. warm water

It will form a rough ball
Let dough rest for 2 minutes
Mix for 1 minute
Knead on floured surface for 5 minutes (or cheat and let your kitchenaid do it for you)
Transfer to oiled bowl, cover, rise for 1 hour

Cook at 500 for 8-10 minutes
One batch makes enough for 3 medium pizzas
