Cilantro Lime Rice

from the kitchen of Heather Peterson

rice
chicken broth
salt
pepper
lime
cilantro

Use chicken broth instead of water to cook rice in. 
Salt and pepper rice. 
Add 1 tsp. to 1 tbsp. lime juice to broth. 
Cook rice. 
Add 1/4 to 1/2 c. chopped cilantro.
Salt and Pepper cooked rice.

  1. dumb question - will you remind me how to cook rice without a rice cooker?

  2. OK, the rule of thumb is 2 to 1 liquid to rice. So, if you are cooking one cup of rice then you need two cups of water (or in the case of this recipe...chicken broth.) Bring the combination to a boil. Turn down the heat to simmer. Put a lid on the pot and cook for 20 minutes.
